Banana Curry

Banana is one of the most popular fruit and is very rich in calcium. Rare are the people, around the world, who do not know about this fruit. However, there is one thing that most of the people might not know about. Banana, especially raw banana, is used to prepare Banana Curry. For all those banana lovers around the world, this special banana curry might add up to the list of their favorite curries. This highly nutritious plant is now not just limited to be eaten as a fruit but also a vegetable.



Ingredients:

3 cups peeled and sliced banana (1/2 inch thick slices)

1 tbsp oil

½ tsp cumin seeds

1/8 tsp asafetida (hing)

Minced green chili to taste

Pinch of turmeric

1 tsp finely chopped ginger

½ tsp salt (or to taste)

½ tsp amchur (raw mango powder)

2 tbsp chopped green cilantro

2 tbsp water

Procedure:

First of all, heat a sauce pan on medium heat and add oil to it. After the oil is heated, add cumin seeds, asafetida, green chili and turmeric and stir for a few seconds. Then add, the banana slices, ginger, mango powder and water and cook it for a minute or so stirring it gently. Remember not to overcook it otherwise the banana will become soft and watery. Then, turn the heat off and add salt mixing it thoroughly with the cooked vegetable. Garnish the curry with chopped cilantro and your Banana Curry is ready to be served with rice or roti.
