Bhuteko Bhaat with Chicken

Bhuteko Bhaat or Fried Rice is one of the most popular lunch items in Nepal. From homes to cafés, people have a tendency to order fried rice when they feel the temptation for rice. Here is one of the ways of preparing Fried Rice with Chicken, i.e., Chicken Fried Rice.



Ingredients:

2 cups steamed rice

1 cup grilled chicken breast cut into 1 inch pieces

1 cup chopped onion

1 cup chopped red bell pepper

3 fresh minced red chilies (to taste)

1 tsp minced garlic

1 tsp minced ginger

1 tsp toasted cumin seeds

1 tsp turmeric

3 dried red chilies

3 tbsp butter

½ cup yogurt

Salt and pepper to taste

1 tbsp sugar

2 tbsp chopped scallion for garnish

Procedure:

First of all, heat a frying pan and add butter in it. When the butter is heated, add dried red chilies and turmeric and fry for about fifteen seconds. Then, add garlic, ginger and fresh chilies and fry for another minute or so. Now, add chopped onion and red bell pepper and cook until it turns light brown. Put chicken pieces, sugar, salt and pepper into it and stir fry for five minutes. Then, add rice, yogurt and toasted cumin seeds and cook until all the liquid is absorbed and the rice grains separate. When done, garnish it with the chopped scallions and serve you Bhuteko Bhaat hot.
