Chili Chicken

Chili Chicken or the Chicken Chili is one of the most desired and loved fast food in Nepal. Chicken being one of the popular types of meat that is most of the people’s favorite, many fast food chains offer this dish in their menu. But not only in restaurants’ kitchen, you can also prepare it at your own home kitchen with some simple ingredients and the below mentioned recipe.



Ingredients:

2 lb of boneless chicken breast pieces

1 large chopped red onion

2 medium chopped tomatoes

1 tbsp garlic paste

1 tbsp ginger paste

4-5 small green chilies (to taste)

1 tbsp honey

1 small seeded and diced green bell pepper

1 small seeded and dice red bell pepper

1 small seeded and diced yellow bell pepper

1 cup green peas

1 tbsp turmeric

½ tbsp ground cumin

½ tbsp ground coriander powder

Red chili powder to taste

2 tbsp vegetable oil

Freshly chopped cilantro for garnish

Salt and pepper to taste

For Marinating

1 large peeled garlic clove

½ inch peeled ginger

1-2 small Thai chilies (to taste)

1/2 tbsp ground cumin powder

½ tsp red chili powder (to taste)

Pinch of freshly grated nutmeg

Juice of 1 lime or lemon

1 tbsp oil (vegetable or canola)

Salt and pepper to taste

Chilly-Chicken

Procedure:

First of all, take a blender and put all the marinating ingredients into it to form a smooth paste. Then, pour the marinating paste over the chicken pieces in a large bowl and mix thoroughly and leave it to marinate for at least four hours. Grill the chicken pieces on a BBQ or broil in an oven until they are fully cooked and turn golden brown in color with a tender look. Now, let the chicken cool and then, cut it into 1 inch pieces and leave it in a bowl.

Next, take a blender and put tomatoes, onions, garlic and ginger and form a paste. Add fresh chilies, honey, all the remaining spices and vegetable oil and form a smooth paste. Then, heat a large deep skillet, pour the paste in it and let it cook, uncovered, for eight to ten minutes in medium heat. Now, add the bell peppers and still it well. When it appears to be tender, add the chicken pieces and stir it well so the chicken is coated in the curry. Let it cook for few minutes and remove it from the pan when done. Put it in a plate and garnish it with the chopped cilantro pieces, your Chili Chicken is ready to serve.
