Cucumber Raita

Cucumbers are healthy food items that could be cooked or eaten raw. It is refreshing and during the hot summers, divulging yourself with the cucumber pieces with salt and pepper sprinkled over it is the best ways to beat the heat, especially in the Terai. It is one of the popular food items, used mostly for making pickles, salads and raita if not eaten raw.



This article mentions one of the ways to make a cuisine out of cucumber, known as Cucumber Raita. It is light and refreshing and is considered to be good for digestion.

Ingredients:

2 cups of yogurt

2 fresh green onions

1 – 2 fresh green chilies

1 thumb-sized ginger root

1 garlic clove

1 cucumber

Juice of 1 lemon

½ tsp cumin seeds

2 – 3 black pepper corns

Salt to taste

Procedure:

First of all, peel the cucumber and wash it. Dry it using a paper towel and slice it into two pieces (not in the center). Then, remove the seed and grate it. After grating it, squeeze and remove all the excess juice. Now, mix the yogurt and the cucumber and then add the pureed ginger and garlic. Mix thoroughly. Then, chop the chili, onions and mix it with the cucumber mixture. Heat a pan and toast cumin seeds in it until it smokes. Then, ground it with peppercorns and salt and add it to the raita. Mix all the ingredients well and finally, garnish it with mint or coriander leaves. Refrigerate it for about an hour and serve your cucumber raita chilled.
