Gorkhali Lamb Curry

Lamb is one of the most desired meats in Nepal and during any special occasions or festivals, it is lamb meat that people prepare as a treat. One of the many ways of preparing lamb is Gorkhali Lamb Curry. It is made with grilled lamb sautéed in a chili mixture.



Ingredients

2 lbs lamb chops

3 dry whole red peppers

2 bay leaves

1 tsp fenugreek seeds (methi)

1 tsp minced garlic

1 tsp finely grated garlic

5 fresh julienne red chilies

1 cup finely chopped onion

1 cup chopped tomatoes

1 cup chopped red bell pepper

1 tsp cracked black pepper

1 tsp cumin

1 tsp coriander powder

½ tsp turmeric powder

2 tbsp mustard oil

1 cup lamb broth

½ cup green onion chopped in 1 inch length for garnish

Salt to taste

Marinade

1 cup chopped roasted tomatoes

1 cup roasted red bell pepper

1 tbsp lemon juice

1 cup roughly chopped onions

1 tsp cumin seeds

1 tsp pepper corn

1 tsp timur (Szechwan pepper)

½ cup chopped celery

2 tbsp mustard oil

2 tbsp soy sauce

Procedure:

Put all the marinating ingredients into a blender and make a smooth paste. Put the lamb chops in a large bowl and pour the paste over it. Mix it well, then cover it and leave it for at least six hours. After that, grill the marinated lamb chops on a charcoal grill and cook it well on every side. It will be ready in about 5 to 7 minutes. Then, cut the grilled lambs into 1 inch cubes.

Now, heat 2 tablespoons of mustard oil in a sauce pan. Fry fenugreek, bay leaves and dry whole red peppers till they turn dark. Add turmeric powder and stir it for fifteen seconds. Then, add onions, sauté and turn the gas into medium heat and stir it until it turns brown. After that, add garlic, ginger, red chilies, cumin, coriander, black pepper and salt to it. Fry them for about 30 seconds and add tomatoes and lamb broth. Then, lower the heat and let the tomato-onion mixture simmer for 10 minutes and turn thick. Add the grilled lamb cubes to the sauce and stir it well. Then, cook for another 10 minutes and let the extra liquid evaporate so that the meat pieces are coated with the sauce. Now, add the seasonings of salt and pepper and garnish it with green onions. Your Gorkhali Lamb Curry is ready to be served with rice or roti, whatever you prefer to share it with.
