Haansko Sekuwa

Haans or duck is one of the popular meat product consumed in Nepal. Especially in Kathmandu, we can find many restaurants and hotels specializing in the duck meat cuisine along with the others. Among many popular and desired cuisines, Haansko Sekuwa or the barbequed duck is also one. Here is how you can make it at your own house:



Ingredients:

5-6 lb whole duck

1 tbsp cumin powder

1 tbsp chili paste

2 tbsp ginger paste

1 tbsp garlic paste

1 tbsp ground timur

1/8 tsp asafetida

1 tsp turmeric

2 tbsp honey

2 tbsp molasses

2 tbsp cooking oil

Salt and pepper to taste

Procedure:

First of all, take a small bowl and put cumin, chili, ginger, garlic, timur, asafetida, turmeric, honey, molasses, oil, salt and pepper mixing thoroughly. Then, clean the duck and wipe it dry and then, rub duck inside and out with the spice mixture. Now, tie the marinated duck around its wings and hang it for at least eight hours to let it marinade and dry completely.

Then, place the duck breast side up on a greased rack with a dripping pan filled with two inches of water in a preheated oven (400 degree F). Roast it for about one hour or more until the duck is cooked thoroughly and the skin turns crispy, check the internal temperature of the meat for confirmation (it should be at least 160 degrees F).  Cut the roasted duck into bite-size pieces and serve it with rice pilaf accompanied with mango chutney or serve your Haansko Sekuwa with drinks during get-together.
