Himalayan Lamb Thukpa

One of the most popular types of noodles-soup in Nepal, Lamb Thukpa is loved by all. It is more popular during the winters and cold days as the hot and spicy soup helps to keep your system warm. It is made up of rice noodles submerged in a Himalayan soup base with meat topping. You could choose the toppings according to your choice, whether you want it to be lamb, chicken, buff or even vegetables. However, here we will discuss the process of making Lamb Thukpa.



Ingredients:

1 lb rice noodles

6 cups chicken broth

½ lb grilled lamb cut into very thin 1/8 inch slices

½ cup julienned carrot

½ cup julienned red bell pepper

½ cup julienned celery

1 cup washed and finely chopped spinach

1 tbsp cooking oil

Salt and pepper to taste

1 tbsp chopped cilantro for garnish

For soup paste

1 tsp minced garlic

1 tsp minced ginger

2 fresh red chili peppers

½ cup cherry tomatoes

2 finely chopped shallots

1 tbsp minced fresh cilantro

1 tsp toasted cumin seed

½ tsp turmeric

½ tsp timur (Szechwan pepper)

1/16 tsp asafetida powder (hing)

1 tbsp freshly squeezed lime juice

Procedure:

First of all, cook noodles in boiling salted water until it is slightly undercooked. Then, drain and rinse it and pour it into a large bowl.

Next, put all the soup ingredients in a blender and make a thick paste. Transfer the paste into a small bowl.

Now, heat a sauce pan and add oil to it. When the oil is heated, add the soup paste and fry for around 30 seconds. Then, add chicken broth and mix everything thoroughly. Let it boil and when it starts boiling, set the heat to low and cook for few minutes. Add salt and pepper for seasoning. Now, put all the vegetables into the soup mixture and cook for minutes. You can also add more broth if you want it soupier, however, make sure to adjust seasoning with salt and pepper.

Finally, pour the soup broth into a serving bowl and add the grilled lamb slices and cooked rice noodles to it and serve it hot. For making your soup spicy, you could also add hot chili sauce or tomato achar to your soup and before catering it to anyone, garnish it with chopped cilantro (you could also use chopped green onion and garlic if you want).
