Latteko saag, stir fried Amaranth
Green vegetables are considered to be very good for health and one among the many is the Amaranth saag (leave vegetable), also known as Latteko saag or Chaulai Saag. This leaf vegetable is said to stimulate digestion and improve appetite as well as enrich the blood. It is useful for constipation, liver disorders, enlarged spleen and long standing fever. This healthy food does not require much time to cook either and also the ingredients used are less.
One of the many ways to prepare Latteko saag is to stir-fry it which is mentioned below:
500 gm Amaranth leaves (red chaulai)
1 medium onion slice
4 whole dry red chilies
3 tbsp oil
Salt to taste
First of all, wash and drain the saag and chop or break them roughly. Now, heat a pan and add oil to it. When the oil is heated, sauté the onions till they become tender and slightly change their color. Then, add the while dry red chili and stir fry it for a minute. Now, add the saag and cook it till the leaves become tender and the water evaporates, which takes about five to ten minutes (depending upon the quantity of the saag). Then add salt according to your taste. Your Latteko Saag is ready to be served with rice or even rotis.
