Sweet Khuwa Barfi

One of the most popular and most desired sweets in Nepal, Khuwa Barfi is a common sweet available in almost all the sweet stores in Nepal. This delicious pistachio flavored milk cubes has been able to win the hearts of many foodies and people having a sweet tooth. Rare are the people who do not like the taste of the pure Khuwa Barfi.



Here is how you can make it in your own kitchen.

Ingredients:

2 cups ricotta cheese (packed in cheese cloth liner and drained overnight)

2 cups khuwa (milk solids)

½ cup condensed milk

1 cup sugar

1 cup melted butter

3 cups half-and-half cream

1 tsp ground cardamom

1 tbsp rose water

½ cup sugar for cream sauce

1 cup unsalted pistachio sliced into thin slivers

Procedure:

Take a large bowl and combine drained ricotta cheese with khuwa. Now, heat melted butter, add half cup of pistachio nuts and fry for a minute or so in a pan. Then, set the heat to low and add the ricotta-khuwa mixture into it. Stir fry it, continuously stirring it until the mixture turns slightly brown and then add sugar, condensed milk and half teaspoon of ground cardamom. Mix everything thoroughly. Stir it continuously until the entire mixture turns stiff. Then, remove it from the heat and pour it into a large lightly-buttered baking sheet. Spread the mixture into an inch thick layer and smooth out the top surface. Now, sprinkle the remaining pistachio nuts over the layer and refrigerate it for at least four hours so that it is firmly set. When that is done, cut it into one inch cubes.

Next, take a sauce pan and pour cream into it. Then add half teaspoon of ground cardamom, rose water and half cup of sugar and let it simmer slowly, constantly stirring until the mixture thickens into a syrupy consistency. Now, remove it from heat and let it cool for a while. Finally, put few cubes of Khuwa Barfi into a serving bowl, add some cream sauce and top it with pistachio slices.
