Thakali Muringakkai

Thakali food is one of the most famous traditional foods in Nepal. There are varieties of cuisines of all types in the Thakali culture, each with the unique taste of its own. Among the various, Thakali-Muringakkai curry is one, which is a drumstick curry made in typical Thakali style.



Ingredients:

5 medium sized tomatoes

2 medium sized onions

3 green chilies

2 drumsticks or potatoes

1 tbsp chili powder (or to your taste)

½ tsp turmeric powder

Few curry leaves

1 cup grated coconut

1 pod garlic

½ tbsp cumin seeds

Salt to taste

1 fresh cup curd/yogurt

For seasoning:

1 tsp mustard seeds

1 small onion

Few curry leaves

First of all, take a blender and grind coconut, cumin seed and garlic together. Then remove the skin of the drumsticks and cut it into small pieces. Also, cut the tomatoes and onions into long thin pieces. Now, heat about 300 ml of water in a pot. Then, add drumsticks, tomatoes and onions along with salt, turmeric, chili powder, curry leaves and chopped green chilies to the water. If required, you can add more water as the vegetables should be completely immersed in water. Then, cover the pan with a lid and allow it to boil on low heat until the vegetables are well cooked.  Now, add the ground mixture and cook it till it turns into thick gravy. Let it cool and then add curd stirring it well. Then, warm it on fire and remove it when it’s warm enough without boiling it.

Now, heat oil in a pan and splutter mustard seeds in it. Then add the chopped onions and curry leaves and sauté it. Also, add this seasoning into the curry and mix it well. Your Thakali-Muringakkai is ready to be served with rice or roti.
