Stuffed Potato Chops

One of the favorite and most popular vegetables in Nepal, Potato is the type of food item that goes along with almost anything and everything. Be it as a vegetable, mixed with vegetable, as a snack or a side dish, potatoes could be prepared in any way you like. Well, this article discusses about one of the many ways of preparing a delicious cuisine out of the versatile vegetable, potato.



Potato Chops are common and could be found in almost every restaurants and hotels around Nepal but what makes this dish different is the addition of meat. The potato balls stuffed with meat is a rare combination that could not be found easily, however, are delicious and even tastier than the regular potato chop. This is how you make it:

Ingredients:

Casing:

5 cups boiled and mashed potatoes

½ cup lentil paste

¼ tsp asafetida

1 tsp ground black pepper

Salt and pepper to taste

Egg wash:

5 large beaten eggs

2 cups bread crumbs

Oil for deep frying

Filling:

1 lb ground lamb

1 cup grated onion

1 tsp garlic paste

1 tsp ginger paste

1 tbsp hot chili paste

2 tbsp soy sauce

½ cup minced scallion

½ tsp ground pepper

2 tbsp clarified butter (ghee)

Salt to taste

Procedure:

Take a non-stick sauce pan and heat butter in it. Fry grated onion, garlic, ginger and chili when the butter is heated and let the mixture turn light brown. Then, add ground meat, soy sauce and black pepper and stir constantly until it turns brown. Now, add scallion just before you take the mixture out of the heat and pour the mixture in a large plate to cool.

Next, take a food processor and combine all ingredients used for casing to form a smooth mass. Wet you hands with water and pour and flatten two tablespoons of the potato mixture on your palm to form a small cup. Put a tablespoon of the filling mixture into the potato cup and enclose the cup by bringing all the edges to the center. Repeat the process with the remaining amount of potato and the filling mixtures.

In another bowl, season the egg wash mixture and bread crumbs with salt and pepper (separately). Now, dip some of the Stuffed Potato Chops into the egg wash mixture. Take them out and slowly and lightly roll them over the bread crumbs to coat the surface completely. Then, deep fry the stuffed potato chops, few at a time. When done, serve your Stuffed Potato Chops with spicy tomato achar.
