Spinach and Lentil Suruwa

Spinach and Lentil Suruwa (soup) prepared with the combination of two healthiest and highly nutritious food items, is definitely worth a try. It not only serves your appetite but also gives you strength and nourishment. This easy to prepare soup does not require too many ingredients as you can prepare it with the help of generally used spices cooked together with spinach and lentil.



Here is the process of preparing Spinach and Lentil Suruwa in your own kitchen:

Ingredients:

1 lb washed and finely cut spinach

2 cups yellow lentils

2 cups finely diced onion

2 cups chopped tomatoes

1 tsp fenugreek

1 tsp turmeric

2 bay leaves

1 tbsp minced garlic

1 tbsp minced ginger

1 tsp cumin powder

2 tbsp cooking oil

2 cups broth or water

2 cups whole milk

Salt and pepper to taste

For garnish

2 tbsp melted butter

1 tsp jimmu (Himalayan herb)

5 cloves thinly sliced garlic

Procedure:

Rinse the lentils thoroughly and put it in a bowl with two cups of warm water. Keep it overnight in the refrigerator. Now, drain the water and rinse off the soaked lentils. Then, in a large sauce pan, pour broth or water and milk and let it boil. When it starts to boil, add the soaked lentils, turmeric, bay leaves, salt and pepper. Cover the pan, turn the heat to low and let it simmer for about twenty to thirty minutes until the lentils are tender. When that happens, reserve it in a bowl.

Next, take a heavy non-sticky pan and heat oil. Now, splitter fenugreek seeds and let it turn dark. Then, add onion and fry it until it turns brown. After that, add chopped tomatoes, cumin, garlic and ginger and fry the mixture for about two minutes. Then, add the cooked lentils and spinach to it and let it cook on low heat for few more minutes. For soupier consistency, add more broth or water and adjust the seasoning with salt and pepper. Finally, heat melted butter and fry the jimmu until it turns dark. Then, add garlic slices and fry till it turns light brown. Now, pour it over the soup and serve your Spinach and Lentil Suruwa with steamed rice, roti or puri.
