Jeera Aalu

Aalu or the potato is one of the most popular and common foods in Nepal. It is included in almost every dish and is an essential ingredient in the regular vegetable curry. There are many way of eating aalu, either boiled, or fried, or grilled or cooked and each of these have its own unique and rich tastes.



One of the many and popular ways of preparing aalu is jeera aalu, potato stir fried with cumin. This is how you make it:

jeera aalu

Ingredients:

6 medium size boiled and diced potatoes

4 tbsp oil

1 tbsp cumin (jeera)

1 tsp red chili powder

½ tsp turmeric powder

1 tbsp slightly roasted and coarsely ground coriander seeds

1 tsp roasted and coarsely ground cumin seeds

2 – 3 dry red chilies

Salt to taste

Procedure:

First of all, heat a pan and add oil to it. When the oil is heated, add cumin seeds and dry whole chilies and sauté it for about a couple of minutes until the cumin seeds starts crackling and change color. Then, add the red chili powder, turmeric and salt and mix everything well. Now, add the diced potatoes and mix it thoroughly with the oil and spices. Then, add the roasted coriander and cumin powder and mix thoroughly with the potatoes. Cook it for about two to three minutes and serve it hot with rotis or beaten rice when done.
