Easy snacks of beaten rice

Beaten rice, commonly known as chiura in Nepal is one of the most popular snacks. This free food can be eaten with almost anything and everything. Apart from eating it raw with other items, it could also be cooked by mixing other ingredients with it. Some of the popular cooked easy snacks to be made out of chiura are chiurako dhakani and chiurako pulao.



These two are the most common snacks made using chiura or the beaten rice and is usually popular among the kids. The favorite after school snack for most of the children, making chiurako dhakani and chiurako pulao is an easy process.

For Chiurako Dhakani

Ingredients:

Chiura (beaten rice), ghee (clarified butter), milk and sugar.

Procedure:

First of all, heat a pan and add ghee to it. When the ghee melts, add the dry chiura to it and fry it. When it is fried enough (it looks crispy), add some hot milk to it and also sugar (according to your taste). Stir it well to mix the ingredients properly and when the milk evaporates, take it out of heat. It is ready to serve.

For Chiurako Pulao

Ingredients:

Chiura ,chopped carrot, chopped cabbage, chopped cauliflower, chopped tomatoes, shelled green peas, chopped green capsicum, fenugreek seeds, cumin seeds, thyme seeds, bay leaf, turmeric, oil for cooking, ghee (optional), salt to taste and chopped coriander leaves.

Procedure:

First of all, heat a pan and add oil to it. When the oil is heated, splatter fenugreek, cumin, thyme and bay leaf. When the seeds start to crackle, add chopped carrot, cabbage, cauliflower, green peas and capsicum and stir fry it for about five minutes.

In a bowl, wash the chiura and drain the water. Add the washed chiura into the vegetable mixture and stir fry it for next five minutes. You could add ghee if you desire. When it is ready, add some chopped coriander leaves and serve it hot.
